Original Flava - Coconut Fried Chicken

A succulent and tasty take on Fried Chicken. Who needs KFC when you can season your chicken this well. And when you can get cheap packs of chicken thighs and legs, this is a great home cooked treat. It may require some herb and spice, but these should be store cupboard staples. This one went down well with our children as a Saturday night chicken treat.

Ingredients:

  • 900g Chicken legs and thighs
  • 1 tsp. salt 1 tsp. black pepper
  • 2 tsp all-purpose seasoning
  • 2 tsp dried thyme
  • 1 Tbsp. curry powder
  • 2 whisked eggs (optional)
  • 2 tsp. chilli
  • 400 ml coconut milk
  • 200g plain flour
  • Vegetable oil (shallow fry)
  • 1 scotch bonnet

  • 1) Firstly season your chicken with half of the salt, pepper, thyme, chilli, and the full 2tsp of all purpose seasoning

    2) Add whisked eggs (optional), coconut milk and mix together! Massage that flavour into the chicken, and if you have time leave it to marinate for an hour or so.

    3) Add rest of the salt, pepper,  chilli and thyme to your flour, and the curry powder and mix together!

    4) Add the chicken to the flour, and cover all over.

    5) Heat some vegetable oil with a scotch bonnet in your frying pan or wok on a high heat.

    6) When the oil is hot add the chicken to the pan, then turn down to a medium heat and cook for 5-7 minutes until golden brown on each side. You might need to add the chicken bit by bit dependent on the size of you pan.

    7) Place the chicken to a pre-heated oven at 180degrees, and cook for about 15 minutes until fully cooked.
